First and foremost, let me assure you that making a fantastic pilaf is easier than you might think. In the following steps, I’ll share some invaluable tips for achieving pilaf perfection, along with a curated list of dishes that pair harmoniously with this culinary delight. With just 10 minutes to prepare and 20 minutes to cook, you’ll have a pilaf masterpiece. Let it sit for an additional 5 minutes and it’ll reach perfection.

The first tip: is to wash your rice thoroughly. Rinse it under running water. The aim is to get all the starch out. If I’m cooking in a hurry (and I’ve often prepared a meal after cries of “I’m hungry!”), then I wash the rice quickly. But if I have planned ahead, I put the rice in a bowl, add hot water and let it sit. It will both soften and release the starch. It is still good to rinse with plenty of water. Okay, I hear you. So let’s start with the ingredients.

rice, coconut oil, salt, turmeric, black pepper, barley noodles, indregients for pilaf

2 cups of rice (baldo – short and chubby)
1/2 cup of thin (Vermicelli or Orzo) barley noodles
1 or 1+½ of coconut oil
1 teaspoon turmeric
3 ½ cups of water
½ or 1 teaspoon of Salt and ½ teaspoon black pepper (Black Pepper is a must. It interacts with turmeric.)

In a pot (it should have a lid), put the oil and add the noodles. Fry over medium heat until golden (don’t worry if you burn them a little. I discovered that they are delicious :)).

Add the washed rice and stir. Then add the water (I add hot water if I am in a hurry. 2nd glass burns your hand badly (bad experience). But you can continue by adding water at room temperature). Add salt, turmeric and black pepper and stir gently.

Reduce the heat and close the lid.

Second tip: Do not break the spell by opening the lid during cooking. These kids need to cook nicely with steam. Over low heat and on a small stove. The rice will absorb the water. If you can’t stand it, at least taste it with a spoon after 15 minutes. If the rice is hard and there is no water left, add another half cup of hot water. These things happen when you are a beginner. Don’t worry about it.

And here’s the third tip: When your rice is cooked, open the lid and tuck in the paper towel (or a clean towel). Make sure it does not touch the rice. We can call this process the steeping and enjoyment stage.

Last tip: Pour the pilaf into a small bowl, press down a little to compact it and invert it onto the plate you are going to serve it on. Ta da! You have a very sweet side dish! You can add garnishes such as red pepper and parsley.
